Almonds are green but almond milk is orange. Why is there a discrepancy between these two?
It is a very valid question and we do get asked this a lot. Every single food item we test for we have carefully selected due to the molecular composition of each item being different. Molecular composition simply means the way it LOOKS is completely different and as such the way it can react in the body can also be entirely different too. For example; almonds are a solid and almond milk is a liquid, regardless of the fact they may come from the same "almond source" their composition is different. As a foundation, the molecules of the liquid are further dispersed than in a solid. Equally, almonds have higher fiber content and as such, they can be digested differently from almond milk. Please note however that, unlike allergies, cellular intolerances (which is what you have been tested for) can be healed by omitting the particular item for a period of 6 - 8 weeks so cellular healing can take place.
