What is E141 Chlorophyll-Copper?

E141 is a chlorophyll derivative in which copper has been inserted into the natural structure of the molecule. This modification enhances the color’s stability, making it a more durable food dye compared to natural chlorophyll. It’s commonly used in products like canned vegetables, sauces, and soups to maintain their green color during processing and storage.


Why do I have an intolerance?

Intolerance to E141 may arise due to sensitivity to copper. Some individuals react to the copper ions present in the chlorophyll-copper complex, leading to symptoms like nausea, headaches, or even allergic-type reactions. The added metal can be harder for sensitive systems to process, causing digestive or immune responses.


What can I do about it?

Avoid foods that list E141 on the ingredient label. Opt for products that use unaltered chlorophyll (E140) or other natural green colorants. Reducing consumption of processed foods may also lower exposure to this additive and help minimize intolerance-related symptoms.
