What is E492 or Sorbitan tristearate?

E492, or Sorbitan tristearate, is an emulsifier used in processed foods to stabilize fat and water mixtures, improving texture and shelf life. It is made by combining sorbitol with three molecules of stearic acid. E492 is often used in baked goods, margarine, and chocolate products.
