Explain: I am intolerant to almonds but almond milk not, intolerant to avocado oil but to avocados, intolerant to dark chocolate but not to cocoa which is made from, intolerant to bacon and not pork?

For example, almonds contain a higher fiber count than almond milk. As such, if there are any gut biome, candida or digestive enzyme deficits then this may bear a relevance.
Avocado oil contains a higher lipid count per mL than the whole avocado.
Dark chocolate has been refined and usually contains a combination of cocoa butter (which is high in lipids).
Bacon contains a lot more sulphites than pork itself.
