Lettuce (Chicory)

What is Chicory?

Chicory is a leafy green vegetable that belongs to the dandelion family, known for its bitter taste and robust leaves. It is often used in salads, as a cooking green, or as a coffee substitute when roasted. Chicory is high in vitamins A, C, and K, and is a good source of inulin, a type of soluble fiber that can benefit digestive health.

Why do I have an intolerance to it?

An intolerance to chicory may stem from its high fiber content, particularly inulin, which can cause gas, bloating, or digestive discomfort in some individuals. Additionally, chicory's bitter flavor can be overwhelming for sensitive stomachs. Those with allergies or sensitivities to related plants may also experience reactions to chicory.

What can I do about it?

To alleviate discomfort, start with small servings of chicory and gradually increase your intake. Cooking chicory can help mellow its bitterness and make it easier to digest. Pairing it with sweeter ingredients, like fruits or honey, may also improve its flavor and tolerability.
