- Spelt is a type of wheat grain often found in bagels, bread, and pizza dough. It can also be found in spelt pasta, pretzels, and flour.
- Spelt is known to contain Gluten.
- Spelt also is known to contain higher gliadin to glutenin ratio.
- An intolerance to this type of wheat grain may signify a sensitivity to these proteins, or where there is an inflamed digestive system.
