What is Halloumi cheese?

  • Halloumi is a semi-hard, unripened cheese made from a mixture of goat's and sheep's milk, and sometimes also cow's milk. It can also contain friendly lactic acid bacteria (LAB), including Lactobacillus, Leuconostoc, and Pediococcus, as well as halophilic bacteria, such as Marinilactibacillus and Halomonas.
  • Halloumi cheese contains 0.2 - 2% lactose. 
  • An intolerance to this food may indicate a gut biome, yeast and fungi imbalance, or an inflamed digestive system.
