What is Spelt and where is it found? 

Spelt (Triticum spelta) is an ancient, nutty-flavored grain related to wheat. First grown in the Middle East, it's now cultivated in Europe and North America, especially in Germany, Switzerland, and the U.S., and is popular in bread and pasta as a nutritious wheat alternative.

Why do I have an inflammatory reaction to Spelt crops?

 An inflammatory reaction to spelt is often due to its proteins, such as gluten. Similar to wheat, spelt contains gluten, which can trigger digestive issues, immune responses, or respiratory symptoms in those with gluten sensitivity, celiac disease, or wheat allergies. Additionally, inhaling spelt dust during harvest or processing may cause respiratory irritation for some individuals.
