What is Corn flour?

  • Corn flour is a type of flour that's milled from dried whole corn kernels. It is commonly used to make, corn tortillas, corn chips, custards, gravy sauces, soups, stews, and a lot of Mexican dishes. 
  • Corn flour is known to not contain Gluten. 
  • Corn flour is different from fresh corn, as it has been dried and milled. Corn flour also contains 27 percent amylose and 73 percent amylopectin.
  • A sensitivity to corn flour may indicate imbalances in the digestive processes or an inflamed gut. It may also be due to a sugar imbalance due to the amount of glucose present in corn flour.
