What is Lipase?

Any enzyme that catalyzes the hydrolysis of fats (found in foods such as olive oil, cheeses etc). Lipases are a subclass of the esterases. Lipases perform essential roles in digestion, transport and processing of dietary lipids in most, if not all, living organisms. Lipase enzymes are usually found in the digestive tract, the liver, pancreas and gallbladder.
