What is Potato flour?

  • Potato flour is made from dried potatoes, which have then been refined to create a fine flour. Commonly used in a lot of "Gluten-Free" breads and bakery goods. 
  • Potato flour is known to not contain Gluten.
  • Potato flour can differ from potatoes as the dried and refining process can change the structure of the potato flour. Potato flour is a starch extracted from potatoes. The cells of the root of the potato plant contain leucoplasts (starch grains). To extract the starch (to make the potato flour), the potatoes are crushed, and the starch grains are released from the destroyed cells. The starch is then washed out and dried to powder.
  • This refining process can cause sensitivities with some.
