What is Quark?

  • Quark or "quarg" is a type of fresh dairy product made by warming soured milk until the desired amount of curdling is achieved, and then straining it. It can be classified as fresh acid-set cheese. It is usually made from cow's milk; a traditional, creamy, vegetarian, unripened cheese tracing its origin to German-speaking and Eastern European countries. 
  • Quark is found in different dishes including cheesecakes, pastries, salads, or can be bought on its own. 
  • Quark contains between 2 - 5% lactose Quark also contains friendly lactic acid bacteria. 
  • An intolerance to this item may indicate gut biome, yeast and fungi imbalance, or an inflamed digestive system. 
  • Quark also contains high amounts of protein. An intolerance may also indicate a digestive enzyme imbalance, usually the enzyme protease.
