  • Quinoa has been known to contain high levels of oxalic acid and saponins. Quinoa should be prepared by soaking before cooking to remove oxalic acids and saponins. 
  • An intolerance to this food may be due to the saponins or oxalic acids, or where there is already gut irritation or inflammation, rendering the food an inflammatory causing item.
