Why is cilantro red and also green or orange?
Cilantro under the section "Fruits & Vegetables" is classified as the fresh version of cilantro. Cilantro under the section "Herbs & Spices" is classified as the dried version of cilantro.
While they may be the same food source, it's the result of the drying process that either renders it an inflammatory food or not; fresh and dried cilantro have a different molecular structure and can be digested differently by the body.
Some people tolerate fresh cilantro better than others; others tolerate dried cilantro better than others.
