Why is garlic in green, and also in orange or red?

Garlic under the section "Fruits & Vegetables" is classified as the fresh version of garlic. Garlic under the section "Herbs & Spices" is classified as the dried version of garlic. 

While they may be the same food source, it's the result of the drying process that either renders it an inflammatory food or not; fresh and dried garlic have a different molecular structure and can be digested differently by the body.


Some people tolerate fresh garlic better than others; others tolerate dried garlic better than others.
